In general I totally agree with you; I hate the idea of &quot;superfoods&quot; that are supposed to make you live forever, or evil foods that are supposed to kill you. This concept irritates me so much that I even &lt;a&gt;wrote a post&lt;/a&gt; about it a while back. :)

But the insanely high concentration of acrylamides compared to every other item on the list, combined with the fact that I drink coffee every day, combined with the fact that I drink a lot of it even compared to other people, was really what threw me for a loop there. I&#039;m still not sure what I&#039;m going to do because these all still seem like kind of compelling reasons to be concerned.

But you know, bread and other baked and roasted foods have been staples of the human diet for so long that I have a hard time believing they could really be that bad for you. It seems like societies would have developed prohibitions against &quot;browned&quot; foods if they saw a correlation between that and people getting sick over the years. It&#039;s not like roasting grains is a process that was just invented (not to mention, as far as I know people have been drinking infusions of roasted chicory, for example, for quite some time), or like the acrylamide is coming from an artificial source. It&#039;s just there.

Don&#039;t get taken in by the idea that you can give yourself cancer (or heart attacks or diabetes) or prevent it by what you eat. There is only one food that is known to be linked to cancer and that is aflatoxin found in organic peanuts and grains with improper storage - but is is well recognized and the FDA watches those products closely and ensures the levels are below safe. STOP reading labels and microanalyzing ingredients, stay away from these healthy eating nazis, and just enjoy your food, whatever you feel like and stop worrying so much. That will make the biggest improvement in your health. Be well, dear.</description>
